Step 2 of 6

In a large bowl, cream the buttery baking spread, sugar and condensed milk until light and fluffy. Add the self raising flour and mix until it forms a soft dough. Roll into a ball and wrap with clingfilm. Place the dough in the fridge for 30 minutes until firm.

Step 3 of 6

Preheat the oven to 180°C, (160°C for fan ovens), Gas Mark 4.

Step 4 of 6

Remove the dough from the fridge and roll out on a floured surface until it is a as thick as a one pound coin. Cut out circles using the round cutter and place onto a lined baking tray. When all the circles are cut, use the small heart-shaped cutter to remove the middle of half of the biscuits, these will form the tops of your biscuits.

You might find it easier to roll portions of dough at a time rather than the whole ball of dough.

Step 5 of 6

Place in the centre of the oven and bake for 10 minutes or until they are just turning golden. Remove from the oven and leave to cool.

Step 6 of 6

Separate the biscuits into tops and bottoms. Lightly sieve the icing sugar over the tops. Spoon the jam into a thin layer over the bottoms and then sandwich together with a dusted top.

Can I use flour to thicken jam? ›

If you really want to thicken it to a more spreadable consistency, the easiest way is to heat it up with some thickeners such as cornstarch. Arrowroot flour is more delicate and taste-neutral, but most cooks won't have it. Unflavored gelatin may also be used.

What makes jam spreadable? ›

Jam is similarly made by crushing a fruit, but this spread leaves in most of the solid pieces of the fruit's fibers and seeds (if they're small enough and safe to consume) to give it a spreadable consistency.

Why is my jam not spreading? ›

Some fruits have natural pectin and thicken well without help. Other fruits must have pectin added. You can add pectin to any jam to speed the thickening process. To get a thick jam, I add pectin (powdered for fruit jams, liquid for pepper jellies), and cook the heck out of it.

Why add lemon juice when making strawberry jam? ›

Adding acid in the form of fresh lemon or lime juice is important for two reasons: First, it makes for a more well-balanced jam, returning some of the acidity lost with the addition of sugar. Second, pectin needs acid to properly activate, or firm up.

Does lemon juice stop jam setting? ›

The addition of lemon juice also helps to activate the pectin and set your jam. Slightly unripe fruit contains more pectin and is more acidic than very ripe fruit and will also help to set your jam more easily.

What thickens strawberry jam? ›

Sugar: Four cups of white sugar sweetens the jam, thickens the jam, and acts as a preservative. Lemon juice: Lemon juice is essential for getting the pectin to gel properly, setting the jam. It also helps prevent the growth of bacteria.

Are homemade biscuits better with butter or shortening? ›

The butter version rises the highest — look at those flaky layers! The shortening biscuit is slightly shorter and a bit drier, too. Butter contains a bit of water, which helps create steam and gives baked goods a boost.

Does lemon juice thicken jam? ›

Lemon is crucial to balancing those sweet flavors, but it also helps the pectin to firm up the jam. It can be added at the start of the cooking process or towards the end, but what must be taken into account is that adding liquids to the jam mixture will inevitably require the jam to cook for longer.

What is the best thickener for jam? ›

Add pectin.

While this trick won't work for jam recipes that already call for pectin, adding pectin to a loose batch of jam while re-cooking it almost guarantees that the jam with set back up nicely. Whisk a tablespoon of powdered pectin (preferably the no-sugar-needed variety) into the pot of cooking jam.

What happens if you add cornstarch to jam? ›

Some of my favourite jam flavours are mixed berries, peach and cherry. This jam recipe is made without pectin. Cornflour (or cornstarch) combined with lemon juice is a great alternative to pectin. It thickens up jam really well, combined with the sugar and heat.

How do you loosen stiff jam? ›

Warm the jam gently and add tablespoon or two of water to help to loosen up the mixture. It is difficult to give the exact amount of water as the size of jars vary and the level of set can be different, but aim for a consistency that is just slightly thinner than the warmed jam.

How do you make jam less hard? ›

Spoon the overcooked jam into a large saucepan. Add 1 cup of water and bring the mixture to a boil over medium heat, stirring to incorporate all of the water. Cook until the gelling point has been reached. Spoon into clean jars and re-process in the water bath.

How do you make hard jam soft? ›

If it isn't scorched though, here are some ideas to try:
  1. Slowly heat it in the microwave a few seconds at a time and then use it as usual.
  2. If it is still too thick, add some water while heating it in the microwave and then use it as a delicious and unusual pancake or ice cream syrup. ...

What if my homemade jam is too hard? ›

If, on the other hand, the jam is rock solid, that means you've gone too far and cooked it too long. You can try adding a little water to thin it out, but bear in mind that after overcooking a jam, you can't really get those fresh fruit flavors back.
