Ingredients

Pulled pork

  • 1 tbsp 1 tbsp cocoa nibs or cocoa powder
  • ½ tbsp ½ tbsp ground black pepper
  • ½ tbsp ½ tbsp ground ginger
  • ½ tbsp ½ tbsp paprika powder
  • ½ tsp ½ tsp anise seeds or fennel seeds
  • ½ tsp ½ tsp cayenne pepper
  • 2 tbsp 2 tbsp olive oil
  • 2 lbs 900 g pork shoulder
  • 1 tbsp 1 tbsp salt

Roasted tomato salad

  • 1¼ lbs 550 g cherry tomatoes
  • 3 tbsp 3 tbsp olive oil
  • 1 tsp 1 tsp sea salt
  • ½ tsp ½ tsp ground black pepper
  • 2 (1 oz.) 2 (30 g) scallionscallions
  • 1 tbsp 1 tbsp red wine vinegar

Avocado hummus

  • 3 (113 lbs) 3 (600 g) ripe avocadoripe avocados
  • ½ ½ lemon, the juicelemons, the juice
  • ½ cup (¼ oz.) 120 ml (8 g) fresh cilantro
  • ¼ cup 60 ml olive oil
  • ¼ cup (1¼ oz.) 60 ml (35 g) sunflower seeds
  • 2 tbsp 2 tbsp tahini (sesame paste)
  • 1 1 garlic clovegarlic cloves
  • ½ tsp ½ tsp ground cumin
  • salt and pepper

Making low carb simple

Instructions

  1. Grind the spices and cacao nibs using a pestle and mortar or grinder. Mix with olive oil and rub all over the pork shoulder.

  2. Place the meat in a slow cooker and cook for 6 hours on low or 4-5 hours on high, until the meat can be easily shredded with a fork.

  3. Remove from the slow cooker and use two forks to shred the meat into small pieces. Serve with roasted tomato salad and avocado hummus.

Roasted tomato salad

  1. Brush olive oil onto the cherry tomatoes and add spices.

  2. Cook the tomatoes on a grill if you have an accessory like a vegetable wok to accommodate delicate veggies. Otherwise, roast in a hot oven until the tomatoes begin to turn color and soften—around 15 minutes in a 440°F (225°C) oven.

  3. Turn off the oven but leave the tomatoes in the oven so they continue to roast. They should become a little blackened, which gives extra flavor.

  4. Remove from oven and arrange on a plate. Top with chopped scallions. Sprinkle vinegar and a little bit more olive oil on the roasted tomatoes to finish.

Avocado hummus

  1. Split the avocados in half and remove the pits and skin.

  2. Put all the ingredients in a blender or a food processor and mix until you get a smooth consistency.

  3. Add more olive oil, lemon juice, or water if the hummus is too thick. Season with salt and pepper to taste.

Tips

Taking a break from a hot oven? Go ahead and cook the cherry tomatoes on your stovetop. Just pan-fry in olive oil over medium-high heat.

Instant Pot

You can save time by cooking the pork in your Instant Pot. After seasoning the meat, cut it into large chunks and place it in the Instant Pot with 1/4 cup of water or broth. Cook on high for 40-50 minutes or according to your Instant Pot instructions.

    I tried this today and its terrible. The coco makes it far too bitter. I rescued it by adding canned tomatoes, onion and peanut better to make a sauce that works with coco.

    I used this recipe and made it in my Instapot. I added 1 cup of chicken broth but it left quite a bit of liquid. I boiled it down and added it to the pork but It made it kind of salty. I used 100% cocoa powder from gherridelli and I didn't think it was bitter.

    3lb meat cut in 2in chunks
    Browned on both sides
    Cooked 50 min with 30 min natural release.

    Honestly everything came out far too salty. I think if just reduced or dropped off the salt, it would taste great.

    I loved this! Not too salty, and not bitter all. I used a 2.5 lb roast. Didn't need to cut it or brown in. Just put the whole thing in for 4 hrs on high. The avocado hummus is heavenly and worked really well with all the components. Only change was that I omitted the ground ginger and fennel but replaced it with Chinese 5 spice. It was perfect and was asked when I would make it again. I'm doubling the recipe next time for more left overs.

    I just made all of this and it was delicious! I know my taste buds so I didn’t use as much as the recipe calls for. I think when adding spices you have to go by your taste. Spices can be very personal and you should taste as you go. But then I use recipes as a guidance not as law. 😂😂😉👍🏻👍🏻

    Way to much salt. Recipe should probably read tsp and not tbsp. I really wish I had read these reviews before making this dish as I would have cut back the salt more than I did.

    I really enjoyed this this, didn’t find it bitter at all. I did however find the meat super salty. I think the previous comment about should be 1tsp rather than 1 tbsp of salt is correct

    I loved it!I only substituted 1tBsp for 1tsp salt. I use Celtic salt.Will cook it again! Avocado 🥑 hummus is delish;-) Thanks for the receipe .👍👋❤️

    Love this recipe, one of our favourites at home. Only ever use 1 tsp of salt though, and that's plenty! I replaced paprika with chilli powder for a little kick - and it's delicious.

    Delicious we really enjoyed it. Excellent flavours but like others I reduced the salt to a teaspoon. Will definitely do this again.

    Cooking time - how long?

    In the title of recipe - 1.5 hours.

    In the instruction "cook for 6 hours on low or 4 hours on high"

    Why does exist such divergence ?

    Very good. Glad I read the comments to reduce salt from 1Tbsp to 1 Tsp. That worked. Also I would not use the seeds in the Hummus. Not needed.
